The combination of soft pumpkin, fresh cowpeas and tasty Z-Rou makes for a great winter stew!

Adobong Kalabasa with Green Beans and Ground Meat (Philippines style)·Z-Rou的做法
Ingredients:
1. 40g vegetable oil
2. 250g plant base meat
3. 130g shallots
4. 20g garlic
5. 50g vegetable stock
6. 40g soy sauce, organic
7. 20g vegan fish sauce
8. 20g vegetarian oyster sauce
9. 2 nos. bay leaf
10. 350g pumpkin, orange
11. 100g tomato
12. 150g green beans
13. Salt and pepperPreheat the oven at 180°Celsius
Season the plant base meat with salt, pepper, oil and a sprinkle of soy sauce
Line it on a baking tray and bake in the oven for 8 minutes or till it is golden brownWash, trim and peel the vegetables
Slice finely the garlic and onion
Cut the pumpkin into 2.5cm regular cubes
Cut the tips of the green beans and make it on a 10cm side
Cut the tomato into half, take out the seeds and dice itIn a medium skillet at medium heat, sweat the onion and garlic till golden color
Add in the diced tomato and sauté, till almost melted
Mix in the crisp plant base meat and stir thoroughly
Add in the pumpkin and mix for 2-3 minutesDeglaze with the fish sauce, soy sauce and oysters sauce
Pour in the vegetable stock, together with the bay leaves, bring back to boiling point
Cover with a lid and let simmer for a couple of minutes moreAdd the green beans, mix well, cover again with the lid and cook for 3 minutes
Season according to your taste and serve hot
Line it on a baking tray and bake in the oven for 8 minutes
Once cooked set aside to cool down
