peanut brittle的做法步骤图



花生 300 g
盐 1/4 tsp
辣椒粉 1/4 tsp
白糖 1 cup
水 1/2 cup
苏打 1/2 tsp

用料  

peanut/almond
salt
chilli powder
sugar
water
baking soda

peanut brittle的做法  

  1. if use sesame seeds, no need to toast beforehand

    if use peanut, almond or larger seeds, toast at 350F for 10mins (if pre-toasted but not enough)

    - rub off skin if you can

  2. mix nuts with salt and chilli powder

  3. add sugar and water in a saucepan, turn on medium heat for 5 mins till big bubble forms, then reduce to low heat with lid on for 3 mins

    NO stir!

  4. 9 mins later, the caramel forms (amber color)

    add in nuts and stir well and heat for 2 mins

  5. add in baking soda and stir and let it grow real quick

  6. pour out to a parchment paper and spread thin

    then add another layer of parchment paper on top. apply with something heavy to press down

  7. flip the brittle to cool completely
